Recipe by Karrie Billets, FNHC
Ingredients
-
1 cup milk (oat, cashew, almond, or coconut—your choice)
-
4 tbsp chia seeds
-
¼ cup pumpkin purée
-
2 tbsp protein powder or collagen powder
-
1 tbsp maple syrup, adjusted to your sweetness level (use monk fruit or stevia for a no-sugar version)
-
1 tsp pumpkin pie spice, adjusted to taste
-
1 tsp vanilla extract
Note: Most protein powders add sweetness, so adjust accordingly.
Optional Toppings
-
Chopped nuts or candied pecans
-
Pumpkin seeds
-
Hemp seeds
-
Granola
Directions
-
Combine: Add milk and chia seeds to a high-power blender and blend 15–20 seconds. Add pumpkin purée, maple syrup, pumpkin pie spice, protein powder, and vanilla.
-
Blend: Blend until smooth and creamy, about 10 seconds. Taste and add more sweetener or spice as desired. Add a splash of milk if it struggles to blend.
-
Set: Pour into a glass jar or container.
-
Chill: Refrigerate at least 3 hours, or preferably overnight, so the chia seeds absorb the liquid and create a pudding-like texture.
-
Serve: Enjoy chilled as a delicious, healthy breakfast or snack!
