Endive Smoked Salmon Bites
These elegant little bites are fresh, savory, and incredibly simple to prepare. They make a beautiful appetizer or light lunch and are a great example of how easy AIP-style entertaining can be.

Ingredients
1 head endive
4 ounces smoked sockeye salmon
1/2 medium red onion, minced
1 medium avocado, sliced
Olive oil, for drizzling
Sea salt, to taste
Instructions
Wash the endive and separate the leaves.
Arrange the leaves on a serving plate. Top each leaf with smoked salmon, red onion, and sliced avocado.
Lightly drizzle with olive oil and season with sea salt to taste.
Serve immediately.
