Avocado AIP Mayonnaise
This creamy avocado-based mayo is a simple, flavorful spread or dip with a rich texture and clean ingredients. It is excellent as a sandwich spread, sauce, or dressing base.

Ingredients
1 medium avocado
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar
1/4 cup coconut milk
1 tablespoon honey
1 teaspoon garlic powder
1/2 teaspoon sea salt
Instructions
Add the avocado, olive oil, apple cider vinegar, coconut milk, honey, garlic powder, and sea salt to a blender or food processor.
Blend until smooth and creamy.
Serve immediately, or store in an airtight container in the refrigerator for up to 1 week.
If the mixture thickens more than you would like during storage, stir in a little extra coconut milk until it reaches your preferred consistency.
Tips
Extra virgin olive oil gives the most robust flavor.
For a milder taste, avocado oil can be substituted.
