AIP Sandwich Bread
This quick plantain-based bread is soft, sturdy, and surprisingly versatile. It works well for mini sandwiches, open-faced toppings, or as a simple side for soups and salads.

Ingredients
2 large yellow plantains
1/4 cup coconut flour
1/4 cup cassava flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons apple cider vinegar
Instructions
Preheat the oven to 400°F.
Peel the plantains and place them in a blender. Blend on high until smooth. If needed, add 1 to 2 tablespoons water to help the mixture blend.
In a small bowl, whisk together the coconut flour, cassava flour, baking soda, and salt.
Transfer the blended plantains to a mixing bowl. Add half of the dry mixture and stir to combine. Add the remaining dry mixture and stir again until a thick batter forms.
Once the oven is ready, stir in the apple cider vinegar.
Divide the batter into 8 portions and place them on a parchment-lined baking sheet. Flatten each portion with a spatula to your desired thickness, as they will not spread much during baking.
Bake for 10 to 12 minutes, or until the edges are lightly golden.
Serve warm, or let cool and store in the refrigerator or freezer for later use.
Tips
Yellow plantains will give the best flavor and texture.
If using greener plantains, you may need a little extra water or oil to blend them smoothly.
If the batter feels too dry, add a small amount of water.
If it feels too thin, add a little extra cassava flour.
