Easy Grain-Free Tortillas

Ingredients
- 3/4 cup cassava flour
- 1/4 teaspoon sea salt
- 2 tablespoons extra-virgin olive oil
- 1/3 cup warm water
Directions
- Whisk together cassava flour and salt.
- Add the olive oil and warm water until a dough begins to form. The dough should not be dry or overly sticky.
- Knead until smooth.
- Divide into 6 dough balls.
- Roll each dough ball between two sheets of parchment paper or use a tortilla press.
- Heat a nonstick skillet over medium-high heat.
- Place the tortilla in the skillet. When air bubbles form (about 1 minute), flip.
- Remove before the tortilla becomes stiff.
- Let cool on a wire rack until warm, then stack on a plate and cover with a towel to keep warm.
Tips for Success
- If the dough feels dry, add warm water 1 teaspoon at a time.
- If the dough is sticky, lightly dust with additional cassava flour.
- Keep rolled tortillas covered until ready to cook to prevent drying out.
- Do not overcook; tortillas will continue to firm slightly as they cool.
