Creamy Cilantro-Lime Cauliflower Rice

Serves: 8–10

Ingredients

  • 2 (12-ounce) bags frozen cauliflower rice
  • 2 tablespoons avocado oil or coconut oil
  • 3/4 cup full-fat coconut milk
  • Zest of 2 limes
  • Juice of 2 limes
  • 1/2 cup chopped cilantro
  • 1½ teaspoons sea salt

Directions

  1. Heat oil in a large skillet.
  2. Sauté cauliflower rice for 5–6 minutes.
  3. Add coconut milk and cook until absorbed.
  4. Stir in lime zest, lime juice, and cilantro.
  5. Season with salt and serve.
