Creamy Cilantro-Lime Cauliflower Rice

Ingredients
- 2 (12-ounce) bags frozen cauliflower rice
- 2 tablespoons avocado oil or coconut oil
- 3/4 cup full-fat coconut milk
- Zest of 2 limes
- Juice of 2 limes
- 1/2 cup chopped cilantro
- 1½ teaspoons sea salt
Directions
- Heat oil in a large skillet.
- Sauté cauliflower rice for 5–6 minutes.
- Add coconut milk and cook until absorbed.
- Stir in lime zest, lime juice, and cilantro.
- Season with salt and serve.
