Watermelon, Feta, and Mint Skewers
This simple, healthy, and gluten-free Fourth of July appetizer recipe will only take 5 minutes to prepare! This is the perfect refreshing dish for any summer get-together.
Ingredients:
- 1 small seedless watermelon
- 1 cup of feta cheese, cut into small cubes
- Fresh mint leaves
- 1 tsp. salt
- Optional: Balsamic glaze (store-bought or homemade)
- Wooden skewers
Instructions:
- Cut the watermelon into bite-sized cubes or use a melon baller to create small watermelon balls.
- Take a wooden skewer and slide on one watermelon cube, followed by a cube of feta cheese, and then a fresh mint leaf. Repeat this pattern until the skewer is filled, leaving a small portion of the skewer empty at the end for easy handling.
- Repeat the process with the remaining skewers, watermelon, feta cheese, and mint leaves.
- Once all the skewers are assembled, place them on a serving platter.
- Sprinkle the skewers with just a small pinch of salt.
- Optional: Drizzle the skewers with balsamic glaze. If you don’t have balsamic glaze, you can make a simple one by reducing balsamic vinegar in a saucepan over medium heat until it thickens and becomes syrupy.
- Garnish the platter with a few additional fresh mint leaves for presentation.
