Chocolate Tigernut Granola
A crunchy, lightly sweet AIP-friendly granola with rich carob flavor and just the right amount of texture. This works well as a snack, a breakfast topper, or a simple make-ahead treat.

Ingredients
1 cup sliced tigernuts
1 cup coconut flakes
1/4 cup avocado oil
1/4 cup maple syrup
1 tablespoon carob powder
1/2 teaspoon alcohol-free vanilla extract
Instructions
Preheat the oven to 275°F. Line a baking sheet with parchment paper.
In a large bowl, combine the tigernuts, coconut flakes, avocado oil, maple syrup, carob powder, and vanilla extract. Stir until everything is evenly coated.
Spread the mixture in an even layer on the prepared baking sheet.
Bake for 35 to 40 minutes, checking at the 30-minute mark to be sure it is not browning too quickly. The granola may still feel slightly soft when it comes out of the oven, but it will crisp as it cools.
Let cool completely, then break apart any larger clusters with your hands. Store in an airtight container.
Note:
Serve on its own, over coconut yogurt, or with fresh fruit for an easy AIP-friendly breakfast or snack.
