Peruvian-Spiced Roasted Sweet Potatoes
- 2 large sweet potatoes, peeled and ½-inch diced
- 2 tablespoons coconut oil, melted
- 1 teaspoon cinnamon
- ⅛ teaspoon ground cloves
- ½ teaspoon ground ginger
- 1 teaspoon maple syrup (optional)
- Zest of 1 lime
- 1 tablespoon lime juice
- Freshly ground black pepper
- 2 tablespoons chopped cilantro (optional)
DIRECTIONS
- Heat oven to 400°F.
- Toss sweet potatoes with coconut oil, spices, pepper, and optional maple.
- Spread on a baking sheet and roast 22–28 minutes, stirring once.
- Toss with lime zest and juice after roasting.
- Fold in cilantro if using.
