Peruvian-Spiced Roasted Sweet Potatoes

  • 2 large sweet potatoes, peeled and ½-inch diced
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon cinnamon
  • ⅛ teaspoon ground cloves
  • ½ teaspoon ground ginger
  • 1 teaspoon maple syrup (optional)
  • Zest of 1 lime
  • 1 tablespoon lime juice
  • Freshly ground black pepper
  • 2 tablespoons chopped cilantro (optional)

DIRECTIONS

  • Heat oven to 400°F.
  • Toss sweet potatoes with coconut oil, spices, pepper, and optional maple.
  • Spread on a baking sheet and roast 22–28 minutes, stirring once.
  • Toss with lime zest and juice after roasting.
  • Fold in cilantro if using.
