Watermelon Radish and Cucumber Salad

Ingredients
For the dressing
1 tablespoon fresh lemon juice
2 tablespoons extra virgin olive oil
Pinch of garlic powder
1/4 teaspoon sea salt
For the salad
1 medium watermelon radish, peeled and thinly sliced
1 English cucumber, thinly sliced
2 tablespoons fresh dill, finely chopped
1/4 teaspoon sea salt
Instructions
- In a small jar, combine the lemon juice, olive oil, garlic powder, and sea salt. Secure the lid and shake well until fully combined.
- In a medium bowl, add the watermelon radish, cucumber, fresh dill, and sea salt. Toss gently to combine.
- Pour the dressing over the salad and toss again until evenly coated.
- Let the salad sit for at least 15 minutes before serving to allow the flavors to come together. It may also be refrigerated for up to 24 hours.
- Serve immediately or chilled.
A few notes
For the best texture, slice the radish very thinly. A mandolin works especially well for this recipe.
