Watermelon Radish and Cucumber Salad

Ingredients

For the dressing
1 tablespoon fresh lemon juice
2 tablespoons extra virgin olive oil
Pinch of garlic powder
1/4 teaspoon sea salt

For the salad
1 medium watermelon radish, peeled and thinly sliced
1 English cucumber, thinly sliced
2 tablespoons fresh dill, finely chopped
1/4 teaspoon sea salt

Instructions

  1. In a small jar, combine the lemon juice, olive oil, garlic powder, and sea salt. Secure the lid and shake well until fully combined.
  2. In a medium bowl, add the watermelon radish, cucumber, fresh dill, and sea salt. Toss gently to combine.
  3. Pour the dressing over the salad and toss again until evenly coated.
  4. Let the salad sit for at least 15 minutes before serving to allow the flavors to come together. It may also be refrigerated for up to 24 hours.
  5. Serve immediately or chilled.

A few notes

For the best texture, slice the radish very thinly. A mandolin works especially well for this recipe.

This salad is crisp, refreshing, and pairs beautifully with grilled proteins, seafood, or light summer meals.
