Tropical Mango Chia Parfait
- 2 cups unsweetened almond milk (or milk of choice)
- ½ cup chia seeds
- 2 tablespoons agave, honey, or maple syrup
- 2 teaspoons pure vanilla extract
- 4 scoops Turnpaugh Health Collagen Peptides
- 2 small ripe mangoes
- Coconut yogurt (for layering)
- Optional
- Mango purée
- Fresh diced mango
DIRECTIONS
In a medium bowl or lidded container, whisk together the almond milk, collagen peptides, agave (or honey/maple syrup), and vanilla extract until fully dissolved.
Add the chia seeds and stir well to evenly distribute.
Let the mixture sit for 10 minutes, then stir again to prevent the seeds from clumping as they begin to gel.
Cover and refrigerate for at least 4 hours or overnight, until the mixture thickens into a pudding-like consistency.
If making the mango purée, peel and slice the mangoes and blend in a food processor or blender until smooth.
To serve, spoon the chia pudding into jars or bowls. Layer with mango purée, coconut yogurt, or fresh diced mango if desired.
