Almost Aji Verde Sauce
INGREDIENTS
- 2 cups fresh cilantro, loosely packed
- 2 cloves garlic
- 4 tablespoons fresh lime juice, plus more to taste
- ½ cup Primal Kitchen mayonnaise
- 2 teaspoons grated fresh ginger
- ½ teaspoon sea salt, plus more to taste
- Freshly ground black pepper, to taste
- 1 tablespoon extra-virgin olive oil, optional, for thinning
- Coconut yogurt, optional, to taste
DIRECTIONS
Add the cilantro, garlic, lime juice, mayonnaise, ginger, salt, and black pepper to a blender or food processor.
Blend until the herbs break down and the sauce becomes mostly smooth.
Check the texture. If the sauce is thicker than you’d like, blend in the olive oil to loosen it and make it more drizzleable.
Taste and adjust with additional lime juice, salt, pepper, or a small spoonful of coconut yogurt (optional) as desired.
Serve.
