Shrimp Stir Fry
Ingredients
- 1 pounds large shrimp, peeled and deveined
- 1 zucchini, sliced
- 2 bell peppers, sliced
- 1 cup broccoli
- 1 red onion, sliced
- 3 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoons fresh ginger, grated
- 0.5 cups chicken broth
- 1 tablespoons honey
- 1 tablespoons sesame oil
- 1 teaspoons sesame seeds
- 4 cups cooked rice, for serving
Steps
1. Prep the ingredients: Peel shrimp, Slice zucchini, bell peppers, and red onion. Mince garlic cloves, chop fresh parsley, and grate fresh ginger.
2. Make the sauce: In a small bowl, whisk together chicken broth, honey, and sesame oil. Set aside.
3. Cook the shrimp: Heat a large skillet or wok over medium-high heat. Add a splash of oil and cook shrimp, until pink and just cooked through, about 3 minutes per side. Remove and set aside.
4. Stir fry the vegetables: In the same pan, add red onion, bell peppers, zucchini, and broccoli. Stir fry until just tender, about 5 minutes.
5. Add aromatics and sauce: Add garlic cloves and ginger to the pan and cook for 1 minute until fragrant. Pour in the sauce and stir to combine.
6. Combine and finish: Return the shrimp to the pan and toss everything together until well coated and heated through, about 2 minutes.
7. Serve: Spoon the stir fry over rice. Garnish with fresh parsley and sesame seeds before serving.
