Creamed Kale with Sweet Onions and Parmesan Romano

Ingredients:

  • 2 medium sweet onions, thinly sliced
  • 1 large bunch kale, stems removed and leaves chopped
  • 1 tsp minced garlic
  • Salt, to taste
  • Pepper, to taste
  • 1/2 tsp cayenne pepper (optional, for heat)
  • 2 cups heavy whipping cream (Can swap for puréed vegetables, like white beans or cauliflower) 
  • 1 cup shredded Parmesan Romano cheese

Instructions:

  1. Sauté onions:
    • In a large skillet or sauté pan over medium heat, add a drizzle of olive oil or a pat of butter.
    • Add the sliced onions and cook, stirring occasionally, until they’re golden and soft (about 10-12 minutes).

  2. Add garlic and kale:
    • Stir in the minced garlic and cook for 30 seconds until fragrant.
    • Add the chopped kale (you may need to do this in batches), and cook until wilted—about 5–7 minutes.
    • Season with salt, pepper, and cayenne.

  3. Add cream:
    • Pour in the heavy whipping cream and bring to a simmer.
    • Reduce the heat and let it cook gently for 10–12 minutes, or until the cream thickens slightly.

  4. Add cheese:
    • Stir in the shredded Parmesan Romano cheese until melted and combined.
    • Taste and adjust seasoning as needed.
