Creamed Kale with Sweet Onions and Parmesan Romano
Ingredients:
- 2 medium sweet onions, thinly sliced
- 1 large bunch kale, stems removed and leaves chopped
- 1 tsp minced garlic
- Salt, to taste
- Pepper, to taste
- 1/2 tsp cayenne pepper (optional, for heat)
- 2 cups heavy whipping cream (Can swap for puréed vegetables, like white beans or cauliflower)
- 1 cup shredded Parmesan Romano cheese
Instructions:
- Sauté onions:
- In a large skillet or sauté pan over medium heat, add a drizzle of olive oil or a pat of butter.
- Add the sliced onions and cook, stirring occasionally, until they’re golden and soft (about 10-12 minutes).
- Add garlic and kale:
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the chopped kale (you may need to do this in batches), and cook until wilted—about 5–7 minutes.
- Season with salt, pepper, and cayenne.
- Add cream:
- Pour in the heavy whipping cream and bring to a simmer.
- Reduce the heat and let it cook gently for 10–12 minutes, or until the cream thickens slightly.
- Add cheese:
- Stir in the shredded Parmesan Romano cheese until melted and combined.
- Taste and adjust seasoning as needed.
