A simple, flavorful sheet-pan dinner featuring juicy chicken thighs, roasted delicata squash, and Brussels sprouts coated in a sweet and tangy maple Dijon glaze. Minimal cleanup and plenty of seasonal flavor.
Prep Time: 15 minutes | Roast Time: 30–35 minutes | Servings: 4
Ingredients
Maple Dijon Glaze
-
½ cup extra virgin olive oil
-
6 tbsp apple cider vinegar
-
5 tbsp pure maple syrup
-
2 tbsp Dijon mustard
-
½ tsp garlic powder
-
½ tsp sea salt
-
1 tsp ground black pepper
Sheet Pan
-
1½–2 lb boneless, skinless chicken thighs (4–6 thighs)
-
1 large delicata squash, ends trimmed, halved lengthwise, seeded, and sliced ½-inch thick (no peeling needed)
-
1 lb Brussels sprouts, trimmed and halved (or green beans, broccoli, carrots, or cauliflower)
-
4–6 slices precooked bacon, chopped (optional)
-
1 tbsp extra Dijon mustard (optional, for brushing chicken)
-
Chopped fresh thyme or rosemary, for garnish
Directions
-
Preheat & prep: Heat oven to 400°F (200°C). Line a large rimmed half-sheet pan with parchment.
-
Blend the glaze: Blend or shake the olive oil, vinegar, maple syrup, 2 tbsp Dijon, garlic powder, salt, and pepper about 20 seconds, until smooth and emulsified.
-
Season the vegetables: Add squash and Brussels sprouts (cut-side down) to the pan. Drizzle with half the glaze and toss. Spread toward the edges, leaving the center open.
-
Add chicken: Pat thighs dry and brush with the optional extra Dijon. Arrange in the center and pour the remaining glaze over the top.
-
Roast: Bake uncovered 30–35 minutes, until chicken reaches 165°F (74°C) and vegetables are tender and caramelized. If using green beans, add them for the final 15–20 minutes.
-
Finish & serve: Scatter bacon over the hot vegetables. Spoon pan juices over the chicken, garnish with herbs, and serve warm.
Chef’s Notes: Delicata skin turns tender when roasted, so no peeling is needed. Precooked bacon saves time and keeps the pan less greasy.
AIP Swap: Omit black pepper and replace Dijon with apple cider vinegar plus prepared horseradish, if compatible with your protocol.
