Quick Pickled Red Onions

Serves: 8–10

Ingredients

  • 1 medium red onion, thinly sliced
  • Juice of 2 limes
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon sea salt

Directions

  1. Place sliced onion in a bowl.
  2. Add lime juice, vinegar, and sea salt.
  3. Mix well and gently squeeze the onions to help soften them.
  4. Let sit for 20–30 minutes before serving.

Ready When

  • Onions turn bright pink
  • Texture softens but still has a little crunch
  • Flavor is tangy and balanced

Serve With

  • Tacos
  • Burrito bowls
  • Sandwiches
  • Salads
  • Eggs

Storage

Refrigerate in a sealed container for up to 1 week.
