Coconut Lime Crema Dessert Cups
Makes: 8 small servings
Crust Ingredients
- 1 cup unsweetened shredded coconut
- 6 Medjool dates
- 2 tablespoons melted coconut oil
- Pinch of sea salt
Filling Ingredients
- 1 (13.5-ounce) can coconut cream
- 1/2 ripe avocado
- Juice of 2 limes
- Zest of 1 lime
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Pinch of sea salt
Directions
- Make the crust by blending the coconut, dates, coconut oil, and sea salt.
- Press the mixture into small jars or ramekins.
- Make the filling by blending the coconut cream, avocado, lime juice, lime zest, maple syrup, vanilla, and sea salt until smooth.
- Spoon the filling over the crust.
- Chill for at least 2 hours before serving.
