Coconut Lime Crema Dessert Cups

Makes: 8 small servings

Crust Ingredients

  • 1 cup unsweetened shredded coconut
  • 6 Medjool dates
  • 2 tablespoons melted coconut oil
  • Pinch of sea salt

Filling Ingredients

  • 1 (13.5-ounce) can coconut cream
  • 1/2 ripe avocado
  • Juice of 2 limes
  • Zest of 1 lime
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Directions

  1. Make the crust by blending the coconut, dates, coconut oil, and sea salt.
  2. Press the mixture into small jars or ramekins.
  3. Make the filling by blending the coconut cream, avocado, lime juice, lime zest, maple syrup, vanilla, and sea salt until smooth.
  4. Spoon the filling over the crust.
  5. Chill for at least 2 hours before serving.

  • Toasted coconut
  • Lime zest
  • Diced mango
  • Fresh mint leaves
