This Paleo Sweet Potato Shepherd’s Pie is a comforting and hearty dish that’s perfect for any night of the week. The savory filling is made with ground beef, vegetables, and a delicious tomato sauce, while the creamy sweet potato topping adds a touch of sweetness to the dish. This recipe is easy to make, nutrient-dense, and will satisfy your cravings for a warm and cozy meal.

Ingredients:

For the Sweet Potato Topping:

  • 3 large sweet potatoes, peeled and cubed
  • 2 tablespoons coconut oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

For the Shepherd’s Pie Filling:

  • 1 tablespoon coconut oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 lb. ground beef
  • 1/4 cup tomato paste
  • 1 cup beef broth
  • 1 tablespoon coconut aminos
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. To make the sweet potato topping, bring a large pot of water to a boil. Add the sweet potato cubes and cook for 10-15 minutes, until tender.
  3. Drain the sweet potatoes and transfer them to a large bowl. Add the coconut oil, garlic powder, onion powder, sea salt, and black pepper. Mash everything together until smooth and creamy.
  4. To make the shepherd’s pie filling, heat the coconut oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  5. Add the carrots and celery to the skillet and cook for another 5 minutes.
  6. Add the ground beef to the skillet and cook until browned, breaking up any large chunks with a spatula.
  7. Stir in the tomato paste, beef broth, coconut aminos, thyme, rosemary, sea salt, and black pepper. Simmer for 5-10 minutes, until the sauce has thickened.
  8. Pour the shepherd’s pie filling into a large baking dish. Spread the sweet potato topping over the filling.
  9. Bake the Paleo Sweet Potato Shepherd’s Pie for 25-30 minutes, until the sweet potato topping is golden brown and the filling is hot and bubbly.
  10. Serve the Paleo Sweet Potato Shepherd’s Pie hot, garnished with chopped fresh parsley.
