Ingredients:
1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
1 tablespoon coconut oil
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon ginger, grated
1 tablespoon curry powder
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1 can full-fat coconut milk
1 tablespoon tomato paste
Juice of 1/2 lime
Chopped cilantro, for garnish
Instructions:
Heat the coconut oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the skillet and set it aside.
In the same skillet, add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for another minute.
