Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 lb. ground turkey
- 2 medium sweet potatoes, peeled and chopped
- 1 can (14 oz.) diced tomatoes
- 1 can (14 oz.) tomato sauce
- 1 can (14 oz.) kidney beans, drained and rinsed (omit for strict paleo)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cinnamon
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
- Add the ground turkey to the pot and cook until browned, breaking it up into small pieces with a wooden spoon.
- Add the chopped sweet potatoes, diced tomatoes, tomato sauce, and kidney beans (if using). Stir to combine.
- Add the chili powder, cumin, smoked paprika, cinnamon, salt, and pepper. Stir to combine.
- Bring the chili to a simmer, then reduce the heat to low and cover the pot. Let the chili cook for 30-40 minutes, or until the sweet potatoes are tender and the flavors have melded together.
- Season the chili with additional salt and pepper, if needed.
