Paleo Bacon-Wrapped Pork Tenderloin Recipe

Ingredients:

  • 1 (1-1.5 lb.) pork tenderloin
  • 8-10 slices of bacon
  • 2 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 400°F.
  2. Season the pork tenderloin with salt and pepper, then set it aside.
  3. In a small bowl, mix together the minced garlic, dried thyme, dried rosemary, salt, and pepper.
  4. Rub the herb mixture all over the pork tenderloin.
  5. Take the bacon slices and wrap them tightly around the pork tenderloin, making sure to cover as much of the surface area as possible.
  6. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  7. Once the skillet is hot, add the bacon-wrapped pork tenderloin to the pan.
  8. Sear the pork tenderloin on all sides until the bacon is crispy and browned, about 3-4 minutes per side.
  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the pork tenderloin is cooked through and reaches an internal temperature of 145°F.
  10. Remove the skillet from the oven and let the pork tenderloin rest for 5-10 minutes before slicing and serving.
