Molcajete Guacamole

Servings: 8–10

Ingredients

  • 3 large ripe avocados
  • 1/3 cup finely diced red onion
  • 1 garlic clove
  • 1/3 cup chopped fresh cilantro
  • 1 teaspoon grated lime zest
  • Juice of 1½ limes
  • 1 teaspoon sea salt, plus more to taste
  • 1 tablespoon extra-virgin olive oil

Directions

  1. Grind the garlic and sea salt in a molcajete or mortar and pestle until a smooth paste forms.
  2. Add the red onion and gently mash to release its juices.
  3. Add the cilantro and lime zest; lightly crush until fragrant.
  4. Add the avocados and fold into the mixture, leaving some small pieces for texture.
  5. Stir in the lime juice and olive oil.
  6. Taste and adjust seasoning with additional salt or lime juice if needed.
  7. Let stand for 5 minutes before serving.

  • Choose avocados that are ripe but still firm enough to hold some texture.
  • Fresh lime zest adds bright citrus flavor without increasing acidity.
  • Mashing the onion with the garlic helps soften its sharpness and distribute flavor throughout the guacamole.

  • Serve with plantain chips.
