Molcajete Guacamole

Ingredients
- 3 large ripe avocados
- 1/3 cup finely diced red onion
- 1 garlic clove
- 1/3 cup chopped fresh cilantro
- 1 teaspoon grated lime zest
- Juice of 1½ limes
- 1 teaspoon sea salt, plus more to taste
- 1 tablespoon extra-virgin olive oil
Directions
- Grind the garlic and sea salt in a molcajete or mortar and pestle until a smooth paste forms.
- Add the red onion and gently mash to release its juices.
- Add the cilantro and lime zest; lightly crush until fragrant.
- Add the avocados and fold into the mixture, leaving some small pieces for texture.
- Stir in the lime juice and olive oil.
- Taste and adjust seasoning with additional salt or lime juice if needed.
- Let stand for 5 minutes before serving.
