Ingredients:
1 small seedless watermelon
1 cup of feta cheese, cut into small cubes
Fresh mint leaves
1 tsp. salt
Optional: Balsamic glaze (store-bought or homemade)
Wooden skewers
Instructions:
Cut the watermelon into bite-sized cubes or use a melon baller to create small watermelon balls.
Take a wooden skewer and slide on one watermelon cube, followed by a cube of feta cheese, and then a fresh mint leaf. Repeat this pattern until the skewer is filled, leaving a small portion of the skewer empty at the end for easy handling.
Repeat the process with the remaining skewers, watermelon, feta cheese, and mint leaves.
Once all the skewers are assembled, place them on a serving platter.
Sprinkle the skewers with just a small pinch of salt.
