Easy and Quick Watermelon, Feta, and Mint Skewers


Watermelon, Feta, and Mint Skewers

This simple, healthy, and gluten-free Fourth of July appetizer recipe will only take 5 minutes to prepare! This is the perfect refreshing dish for any summer get-together.

Ingredients:

  • 1 small seedless watermelon
  • 1 cup of feta cheese, cut into small cubes
  • Fresh mint leaves
  • 1 tsp. salt
  • Optional: Balsamic glaze (store-bought or homemade)
  • Wooden skewers

Instructions:

  1. Cut the watermelon into bite-sized cubes or use a melon baller to create small watermelon balls.
  2. Take a wooden skewer and slide on one watermelon cube, followed by a cube of feta cheese, and then a fresh mint leaf. Repeat this pattern until the skewer is filled, leaving a small portion of the skewer empty at the end for easy handling.
  3. Repeat the process with the remaining skewers, watermelon, feta cheese, and mint leaves.
  4. Once all the skewers are assembled, place them on a serving platter.
  5. Sprinkle the skewers with just a small pinch of salt.
  6. Optional: Drizzle the skewers with balsamic glaze. If you don’t have balsamic glaze, you can make a simple one by reducing balsamic vinegar in a saucepan over medium heat until it thickens and becomes syrupy.
  7. Garnish the platter with a few additional fresh mint leaves for presentation.
  8. Serve the Watermelon, Feta, and Mint Skewers chilled or at room temperature.
