This is the perfect salad for a warm summer day, packed with flavor and nutrients, and so easy to make!

Add Chicken or Tofu for some extra protein

Summer Melon Salad

Ingredients

Cucumber

Zuchini

Canteloupe

Burrata

Prosciutto

Olive Oil

White Balsamic Vinegar

Juice of one lemon

Salt & Pepper to taste

Instructions

Slide cucumber and zucchini long-ways with a mandolin

Slice cantaloupe or use a melon baller to create bite-sized pieces

Slice Burrata

Plate starting with vegetables, topping with melon, prosciutto, and burrata

Drizzle Olive Oil, Vinegar, and lemon juice
