Paleo Coconut Curry Chicken Recipe

This Paleo Coconut Curry Chicken is a rich and flavorful dish that’s perfect for a cozy night in. The tender chicken is simmered in a creamy coconut curry sauce that’s made with a variety of aromatic spices, including turmeric, cumin, and coriander. Serve it over cauliflower rice or with your favorite gluten-free naan for a satisfying and healthy meal.

Ingredients:

  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz.) coconut milk
  • 1/4 cup chicken broth
  • 1 tablespoon coconut sugar
  • 1 tablespoon fish sauce
  • 1 red bell pepper, sliced
  • 1/2 cup frozen peas
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions:

  1. In a large skillet, heat the coconut oil over medium-high heat. Add the onion, garlic, and ginger and sauté until the onion is soft and translucent, about 5 minutes.
  2. Add the chicken to the skillet and cook until browned on all sides, about 5-7 minutes.
  3. In a small bowl, mix together the curry powder, turmeric, cumin, coriander, and cayenne pepper. Add the spice mixture to the skillet and stir to coat the chicken.
  4. Pour in the coconut milk, chicken broth, coconut sugar, and fish sauce. Bring the mixture to a simmer and cook for 10-15 minutes, until the chicken is cooked through and the sauce has thickened.
  5. Add the sliced red bell pepper and frozen peas to the skillet and continue to simmer for another 5-10 minutes, until the vegetables are tender.
  6. Season the Paleo Coconut Curry Chicken with salt and pepper, to taste.
  7. Serve the Paleo Coconut Curry Chicken hot, garnished with fresh cilantro. Enjoy over cauliflower rice or with your favorite gluten-free naan.
