- 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon curry powder
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz.) coconut milk
- 1/4 cup chicken broth
- 1 tablespoon coconut sugar
- 1 tablespoon fish sauce
- 1 red bell pepper, sliced
- 1/2 cup frozen peas
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions:
- In a large skillet, heat the coconut oil over medium-high heat. Add the onion, garlic, and ginger and sauté until the onion is soft and translucent, about 5 minutes.
- Add the chicken to the skillet and cook until browned on all sides, about 5-7 minutes.
- In a small bowl, mix together the curry powder, turmeric, cumin, coriander, and cayenne pepper. Add the spice mixture to the skillet and stir to coat the chicken.
- Pour in the coconut milk, chicken broth, coconut sugar, and fish sauce. Bring the mixture to a simmer and cook for 10-15 minutes, until the chicken is cooked through and the sauce has thickened.
- Add the sliced red bell pepper and frozen peas to the skillet and continue to simmer for another 5-10 minutes, until the vegetables are tender.
- Season the Paleo Coconut Curry Chicken with salt and pepper, to taste.
- Serve the Paleo Coconut Curry Chicken hot, garnished with fresh cilantro. Enjoy over cauliflower rice or with your favorite gluten-free naan.
