This chicken curry recipe is a delicious and healthy twist on a classic Indian dish. Made with tender chicken, aromatic spices, and creamy coconut milk, this recipe is perfect for a flavorful weeknight dinner. Serve it with cauliflower rice or over a bed of greens for a nutritious and satisfying meal.

Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon coconut oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 can full-fat coconut milk
  • 1 tablespoon tomato paste
  • Juice of 1/2 lime
  • Chopped cilantro, for garnish

Instructions:

  1. Heat the coconut oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the skillet and set it aside.
  2. In the same skillet, add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for another minute.
  3. Add the curry powder, cumin, coriander, turmeric, cayenne, sea salt, and black pepper to the skillet. Stir everything together and cook for 1-2 minutes, until fragrant.
  4. Add the coconut milk and tomato paste to the skillet and whisk everything together until smooth. Bring the mixture to a simmer.
  5. Add the chicken back into the skillet and stir everything together until the chicken is coated in the sauce. Cover the skillet and let everything simmer for 15-20 minutes, until the chicken is cooked through and tender.
  6. Add the lime juice to the skillet and stir everything together. Taste and adjust the seasoning as needed.
  7. Serve the paleo chicken curry hot, garnished with chopped cilantro.
