Festive Gingerbread Cookies (Allergen-Friendly!)

These soft, fragrant gingerbread cookies are perfect for spreading holiday cheer! Free of gluten, dairy, soy, and refined sugar, they’re a sweet treat everyone can enjoy.

 

Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup
  • 1 tbsp molasses
  • 1 tsp vanilla extract

Instructions

  1. Preheat & Prepare
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients
    In a large bowl, whisk together almond flour, coconut flour, ginger, cinnamon, cloves, nutmeg, and salt.
  3. Incorporate Wet Ingredients
    Add the melted coconut oil, maple syrup, molasses, and vanilla extract to the dry mixture. Stir until a soft, slightly sticky dough forms.
  4. Roll Out Dough
    Place the dough between two sheets of parchment paper. Roll out to about 1/4-inch thickness.
  5. Cut Out Shapes
    Use your favorite cookie cutters to create festive shapes! Carefully transfer the cookies to your lined baking sheet.
  6. Bake
    Bake for 8-10 minutes, or until the edges are lightly golden. Let them cool completely on the baking sheet to firm up before decorating or eating.
  7. Decorate & Enjoy
    Get creative with allergen-free icing or leave them plain—either way, they’re delicious! Share your festive gingerbread cookies with loved ones.
