Chocolate Chip Chickpea Bites (Vegan)

Recipe adapted from Danielle Brown @healthygirlkitchen

INGREDIENTS:

1 – 15 oz. can of chickpeas (drained and rinsed)
5 dates
½ cup almond butter or your favorite seed/nut butter
¼ cup gluten-free rolled oats
2 Tbsp. maple syrup or honey
½ cup vegan dark chocolate chips
1 tsp. vanilla extract

INSTRUCTIONS:

Blend all ingredients (except dark chocolate chips) in a food processor.
Mix in dark chocolate chips.
Roll mixture into 1 inch balls.
Allow bites to set in the fridge for 30 minutes before enjoying.
