Chocolate Chip Chickpea Bites (Vegan)

Recipe adapted from Danielle Brown @healthygirlkitchen

 

INGREDIENTS:

 

  • 1 – 15 oz. can of chickpeas (drained and rinsed)
  • 5 dates
  • ½ cup almond butter or your favorite seed/nut butter
  • ¼ cup gluten-free rolled oats
  • 2 Tbsp. maple syrup or honey
  • ½ cup vegan dark chocolate chips
  • 1 tsp. vanilla extract

 

INSTRUCTIONS: 

 

  • Blend all ingredients (except dark chocolate chips) in a food processor.
  • Mix in dark chocolate chips.
  • Roll mixture into 1 inch balls. 
  • Allow bites to set in the fridge for 30 minutes before enjoying.
